Wash kale and remove stems. Chop into bite sized pieces. Chop or grate carrots.
1 bunch of kale
2 Tablespoons olive oil
2 medium sized carrots
1/4 cup coarsely chopped walnuts
2 oz. mozarella cheese, shredded
fresh ground pepper
Massage olive oil into kale in a large bowl about 30 seconds. Sprinkle on sea salt and fresh ground pepper as desired. Add chopped carrots, nuts, & cheese. Toss and serve.
Easily substitute other types of nuts, seeds, or dried fruit to mix things up. Add grilled chicken, tuna, or salmon if desired or even hard boiled egg.
