3 cups rolled oats

2 eggs (beaten)

1/4 cup coconut oil

1 cup milk

1/4 cup maple syrup

1/2 cup applesauce (or 1 mashed banana)

1 teaspoon cinnamon

1 teaspoon baking powder

1 teaspoon vanilla


Mix well together.  Pour into 9X12 baking dish.  Bake at 350 degrees for 25 minutes.  Serve warm or store in the refrigerator for use all week long!


You can eat this dish warm or cold.  If you are storing it in the refrigerator, you can eat it like a granola bar or chop it up and put milk on it like cereal.  Also, feel free to add nuts, seeds, or dried fruit!
